Sports are in full swing starting this week in our house… I can almost smell football in the air! My oldest will be playing under the Friday night lights this year and I CANNOT wait! And since these kids seem to want to eat every. single. day., I am always looking for new, healthy crock pot recipes to try. This is one of my newer faves… crazy easy, super yummy, and healthy, which this active fam needs!

Black Bean Chicken Tacos

Ingredients:

 

2 can black beans

1 c. frozen corn

1 ranch packet

1 taco seasoning packet

3/4 c. water

4-5 chicken breasts

1/2 c. fresh pico or salsa

3 TBL fresh cilantro

Directions:

Mix 1st 5 ingredients in bottom of crock pot. Top with chicken and salsa. Cook on low’ til chicken is done. Shred chicken and return to crockpot. Add in fresh cilantro and stir together. Serve with taco fixings.
