Super Food Salad
Ingredients:
1/2 c. uncooked quinoa
1/3 c. red onion, chopped
1 avocado, chopped
1 can black beans, rinsed and drained
1 c. pomegranate arils (Trader Joes sells these year-round)
1 c. frozen corn, thawed
1/3 c. cilantro, chopped

Vinaigrette:
2 lemons, juiced (need 1/4 cup juice)
2 minced garlic cloves
dash of sugar
3 T extra virgin olive oil

Instructions:
Cook quinoa according to directions, let cool completely. Mix together all ingredients and toss with vinaigrette. Serves 5.
